From Alaska Marine Highways to Local Food Favorite
Chad’s culinary journey began on the Alaska Marine Highway, where he cooked for hundreds, mastering institutional-style ferry meals like lasagna for 200 people and large kettles of soup. This large-scale, comfort-food approach deeply influenced his philosophy at Pucker Wilson’s.
“My background is a bit different than many in the industry. I’ve worked in upscale kitchens, but making large amounts of comfort food and feeding many people is what truly resonates with me,” Chad explains. “We keep our menu small, focusing on dishes we execute consistently and exceptionally well, whether it’s burgers or our popular brisket.”

Taking a Culinary Leap
Opening in 2014, Pucker Wilson’s quickly became a hit. “Initially, it felt like a midlife crisis,” Chad admits. “I wasn’t sure I wanted to cook professionally. My girlfriend encouraged me, reminding me cooking was what I loved and knew best. It felt like a Hail Mary pass, but customers showed up immediately, and our business has grown every month since.”
Community Roots and Steady Expansion
Pucker Wilson’s first location, fondly known as “the flagship,” operates at the Juneau Arts and Humanities Council, serving as a year-round local burger hub. Its success led Chad to expand in 2017, opening a second, larger location in the Mendenhall Valley, an area previously underserved in dining options.
“We’ve always prioritized the local Juneau community,” Chad emphasizes. “Initially, we didn’t cater to visitors, focusing instead on serving our neighbors year-round. But recently, we’ve embraced the strong tourism industry here by opening a third location downtown, which has been fantastic. We now offer patrons the chance to enjoy a meal with a margarita or beer — a new venture for us.”
The downtown spot, located on Franklin Street inside the food truck park downtown, significantly expanded Pucker Wilson’s footprint and workforce, growing the team from eight to 25 employees.

“It’s incredibly rewarding to give back and create memorable community events,” Chad shares. “Last year, our free brisket event in the valley attracted over 2,000 people. It’s moments like these — filled with community spirit and excitement — that make running Pucker Wilson’s truly special.”
